Yummy Oatmeal

by Eliott on October 21, 2011

I found this amazing vegan oatmeal recipe this morning at Sunflowernatural.com  Since I had nearly all the ingredients on hand, I decided to give it a try.

I am so glad that I did so. This was truly yummy.

I regret that I did not take a picture to post here, but it was so good I did not think about the picture until I was almost finished wolfing down my bowl.

Apple Oatmeal

Ingredients:
1 1/2 cup water

1/4 teaspoon salt
1/4 teaspoon cinnamon
1/2 cup vanilla soy milk
1/2 cup chopped dates
1/2 cup chopped almonds
1 apple, grated
Directions:Bring water to a boil. Add oatmeal, cinnamon, and salt. Cover, reduce heat to low, and simmer until liquid is absorbed (about 10 minutes). Stir in remaining ingredients and serve hot.

The recipe did not state what type of oats to use. I had Organic Old-Fashioned rolled oats and found the cooking times to be perfect for them.

The only real change I made was that I substituted Vanilla Almond Milk for the Vanilla Soy Milk suggested in the recipe. I did this because the Almond Milk was all I had. In retrospect the Vanilla Almond Milk made the recipe a little too sweet for me, probably because the dates already contributed plenty sugar, but I still loved it.

Next time I make it I will probably use unsweetened Almond Milk.

Welcome to The Vegan Press!

by Eliott on October 20, 2011

I am a new vegan and I am going to use this blog to write about things I discover and things I think others might enjoy.

The style and form will be an ongoing evolving work, but I need to get going and stop procrastinating instead of waiting for inspiration.

Come back often and see how the site changes.

P.S. I am open to suggestions.
